Cucumber & Tonic Collins

Gin

Half Lime
1/2
Cucumber (peeled)
Tonic Water to top up (chilled)
First cut the peeled cucumber into lengths and blitz to purée in a food processor or blender. Then pass through a fine sieve into a jug. Now put 3 ice cubes into a glass and pour over the gin followed by the squeezed and sliced half lime. Use a long cocktail spoon to stir in the prepared cucumber juice. Stir until very cold. Now top it up with tonic water. Stir again. Enjoy the refreshing Cucumber & Tonic Collins.
