East India Gimlet
2 cl
Gin
2 cl
Lime Cordial
2
Dashes of celery bitters
1
Pinch of dill
1
Lime Wedge
Lime cordial: Prepare a batch of simple syrup. Add freshly squeezed lemon juice, lemon zest and citric acid. Let it infuse for 24 hours. Then fine-strain the syrup and discard the remnants. Put all the ingredients and the juice of the squeezed lime wedge into your shaker. Add ice and shake hard. The drink should get as cold as possible without the ice melting. Then double-strain into a chilled coupe glass. With this cocktail another dill sprig as garnish is a must-have to complete the oriental character in terms of flavour and appearance.
