Soda water to top up (chilled)
Elderflower cordial: Prepare a batch of simple syrup. Add freshly peeled lemons, lemon zest, citric acid and fresh elderflower heads. Let it infuse for 24 hours. Then fine-strain the syrup and discard the residue. In contrast to the classic Tom Collins, the elderflower alternative needs to be shaken to blend the cordial with the rest of the ingredients. After mixing the gin, lime juice, syrup and cordial, pour the drink into a highball glass filled with ice and top it up with soda water. Use sparkling wine for the royal version. Stir with a long cocktail spoon. There is no classic garnish to the cocktail. Any sprig of your favourite herb gives it the extra touch.
